Default Logging File Access Read & Write

From a Windows 2000 workstation I want to run a script to monitor and record: computername, IP address, File accessed either Read or Written to, Date and Time.

This script will need to record the above information for a computer located within the network. Example, on my personal computer I want to run this script to record who, when, what when a person access other shares on anther workstation. The script should prompt me which computer name or IP address of computer I wish to monitor this activity on, non-windows workstation.
