1. I haven't seen the book, but it seems pretty likely that you can
change most or all references to "Jos Coffee" to your own company name
without breaking the code. Make a backup of the code and try it!
2. It is possible to create the menus you describe using the latest
DHTML code and style sheets in the latest browsers. But chances are
that some of your customers won't have the latest browser... how would
they get around your site? Also, your questions suggest that you're
pretty new to web programming... building your own menus in DHTML would
probably be a challenge.
Javascript is used often for this task because it's powerful and it's
recognized by many more browsers than the latest DHTML. While I'm
guessing that you won't find it easy to write your menus in Javascript
either, if you look on the web for the many sites where Javascript
developers share their code (one is at http://javascript.internet.com/)
you're likely to find menu code that you can modify to suit your needs.
Maybe you'll find a ready-made DHTML code set too!
Macromedia's Fireworks 4 makes it *very* easy to build the menus you
describe. Last week I created a full web site navigation system with
1/2 dozen main menus and twice as many supplementary menus, complete
with rollovers and other nice interactive features, in less than 20
minutes. It created all the Javascript and HTML for a lightweight
no-image menu system which I just dropped into my code. It's also a
brilliant program for creating web graphics of various kinds. Costs
$299 U.S. from http://www.macromedia.com and probably less from
resellers. They have a free trial, but I don't know if it offers all
features.

1. In the book and on the Wrox site, they have code that refers to Jos
