Default problem with date/time format

Hi,
I have big issue with date/time format which are stored in one Share Point 2010 document library's column. Dates are stored as e.g. 15.11.2011., and in some fields dates are stored in wrong format, as 2011-11-15T00:00:00Z. When i try to open Infopath document that uses date in wrong format, the form becomes unusable, and any further changes could not be made.
Does enyone have clue what could be the problem?
I have one remark: Today() function is in use (not Now() function)
