Lightbulb Understanding Interfaces

So I'm having a bit of a tough time understanding Interfaces. On page 199 we have an example:

Cow myCow = new Cow();
Chicken myChicken = new Chicken();
IConsume consumeInterface;...

Exclamation Why is this not in the book's errata?!?!

I was just going to post the same exact thing! This actually thew me off on later chapters with Interfaces.

The statement:
You can assign a variable that is of the base type to a variable of one...
