Default About ENUM

I need to know hoe to use the ENUM structure when defining my own types.Let us say that i like to define gender as my own type and it will have the following values:
Male,Female,NotSpecified,Unknown
Plus how can i use the ENUM structure if i am designing a class of employees and want to use the above enum structure for their gender.
