Could you not use the entity datasource control to reference a .cs file that has methods contained that are using the LINQ query language based? In other words use ETF as part of maybe a three tiered architecture kind of application? Is that possible and is it widely used nowadays in the .NET application development world?

Nope, you can't. But you can use an ObjectDataSource for that. For more info:
