The book references the customers table from the database, but there is no customers table included in the downloaded code? I can see every other table. Any help would be great.

You probably see the customers table in the design sections of the book. The design is not a solution, is just the base of knowledge and the logic needed to create the solution. In order to understand some concepts, examples are being made using examples tables and parts of code.
Search in the source code only what is in the Solution sections.
