Cool RoR IDE Question

I just started to work on RoR and got the first app to run from the first chapter. It was very easy and I even downloaded the Eclipse plugin for RadRails and tried the Aptana example and it has worked, with sqlite3, mysql gives all kinds of errors.

Question 1: I want to work on an e-Commerce project and Spree provides just the stuff I need. How would I go about and start that app on the Eclipse or RadRails IDE? Do I need to create a new Rails Project and then move everything from Spree into there? I hope somebody knows.

Question 2: Eclipse keeps running things with WEBrick even though I installed mongrel like it says in the book. How can I switch to mongrel? I've asked this question in the Eclipse forum as well just in case.
