There are two reason to hide a process in the task manager 1) to hide a virus and 2) to prevent a user with no privileges to kill it. For 1) XP/2K/NT do not allow to hide a process, and for 2) the workaround is to create an 'operator user' that does not have the permissions to run the task manager (or whatever needed)

BTW this is a large if not huge site, but did you try 'hide process task manager' from google? :)
